I first baked an 11x15 inch sheet cake. Then I made a template for the #3 out of freezer paper, laid it over the cake, and carved out the shape. I then wrapped and froze the cake to make it easier to ice. (carved cake is terribly difficult to ice w/o freezing it first) Next was a crumb coat and then I let it sit for a while to thaw and also let the icing set. The bottom tier is an 8 inch square 2-layer cake, and the top tier is a 6 inch round 2-layer. They are both iced in buttercream with tons of fondant accents. The fence and grass is piped in buttercream. The bandana is fondant with details piped in royal icing. The figures were all made with the help of candy molds...I just pressed the marshmallow fondant in the greased candy mold, carefully pulled them out, touched them up, and then let them dry. The hay bale is a small rectangle of cake, crumb coated in buttercream, and covered in fondant. I cut very thin strips and "glued" them to the bale with a touch of water. Then I wrapped "straps" around to look like the hay was tied up. Oh, and I added a bit of silver pearl dust to the horseshoes and a bit of gold to the sheriff's badge. This cake was so fun to make! The request was for a Mad Hatter topsy turvy cake...which I had never done before. For some reason, I am always up for a challenge, so I agreed. I had a picture to follow for the decorating, and I watched a YouTube tutorial on the construction of a topsy turvy cake. Seemed easy enough, so got started. Everything seemed to be going smoothly...I made the fondant decorations that needed to dry for a day or two. Then Thursday was baking day. It was a 2 tier cake, and in order to carve the shape for this type of cake, each tier had to be made of three layers. Needless to say, I did a lot of baking on Thursday! Friday was decorating day. This was also my first time to completely cover a cake in fondant, so that was a learning experience as well. As the cake sat, the top layer of the bottom tier started to push over some, causing the fondant to sag and bubble a little. I was disappointed b/c it didn't hold the tapered-sides shape and sloped top that I had carved. But in the end, the customers were very pleased.
